Protein Blueberry Muffins

Makes 12 muffins

  • 6 egg whites
  • 2 cups oatmeal
  • 1 1/2 cup oat flour
  • 1 cup low-fat cottage cheese
  • 1/2 cup applesauce (natural, no sugar added)
  • 1 banana
  • 2 scoops vanilla protein powder (20g P)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ c frozen blueberries

Directions:

Preheat oven to 375 Fahrenheit.
Combine all ingredients together in a bowl.
Spray a non stick muffin pan and fill each with the muffin mixture.
Bake for approximately 25 minutes, or until fully cooked through. Makes 12 muffins.
