Ingredients

1/4 cup jasmine rice
65 g shelled edamame
85 g green cabbage
1/2 cup light coconut milk
135 g tempeh
200 g broccoli
2 tsp soy sauce
2 tsp lime juice

Directions

  1. Cook the rice according to the instructions on the box.
  2. Cut up veggies and tempeh.
  3. Pour coconut milk in a saucepan on medium heat. Add veggies and tempeh, and bring to a boil. Reduce heat, and simmer for 5 minutes.
  4. Season with lime juice and soy sauce.
  5. Place rice in bowl and pour veggie mixture over - enjoy!
