Healthy Gluten-Free Banana Chocolate Chip + Pecan Protein Muffins

Servings 12 muffins
Ingredients
3 large ripe bananas, mashed1/3 cup olive or vegetable oil
2 eggs
2/3 cup coconut syrup / coconut sugar
1 teaspoon vanilla extract
2 cups gluten-free flour
1 scoop of protein powder (vanilla)
1/4 teaspoon fine sea salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 cup chocolate chips (optional)
1/2 chopped pecans (optional)
Directions
- Preheat oven to 350°F and prepare a muffin pan. Line a muffin pan with paper liners or spray each line with cooking spray to prevent sticking.
- Mix the first five ingredients together until well-combined.
- In a separate bowl, do the same for the remainder of the ingredients excluding the two optional ones.
- Add the dry mixture to the wet and fold until blended.
- If desired I added the chopped pecans and chocolate chips.
- Spoon batter to your prepared muffin pan and bake for 15-18 minutes or until a toothpick comes out clean.
- Let cool completely before slicing and icing with peanut or almond butter!
