Classic Meat Loaf

In this day and age of new, bigger and better, sometimes we forget the appeal of homegrown classics. Have a taste of your childhood and win dinner with this classic meat loaf recipe that is sure to please whether you're feeding family, friends or just yourself.
Ingredients
2 eggs
1/3 cup sugar free ketchup, divided
1/2 yellow onion, peeled & finely chopped
10 cremini mushrooms, finely chopped
1 tbsp Worcestershire sauce
1 tsp sea salt
1/2 cup oats
1 1/2 lbs lean ground beef
Directions
- Preheat the oven to 325 and line a loaf pan with parchment paper.
- In a large bowl, mix together the eggs, half the ketchup, onion, mushrooms, Worcestershire sauce, salt, oats, and ground beef, until just combined.
- Add the mixture to the loaf pan and evenly press down. Spread the remaining ketchup on top.
- Bake for 80 minutes or until the internal temperature reaches 160.
- Allow to rest for 10 minutes, then serve.
